中文摘要: 沃柑汁是一种富含多种营养成分的果汁,目前主要以鲜果汁销售为主,缺乏必要的浓缩果汁深加工形式。为探讨不同浓缩加工方式对沃柑汁品质特性的影响,该研究采用水浴加热浓缩(water bath heating concentration,HC)、电磁加热浓缩(electromagnetic heating concentration,EHC)、真空浓缩(vacuum concentration,VC)和冷冻浓缩(freezing concentration,FC)4种方法制备沃柑汁并对其品质特性进行测定。结果表明:采用真空浓缩(VC)处理方式能够有效地保护沃柑汁中的酚类物质、还原糖、有机酸和氨基酸。与其他浓缩方法相比,真空浓缩使总酚、还原糖及有机酸含量分别提高5.53%~26.34%、3.15%~11.64%和6.80%~165.59%。此外,真空浓缩处理在保护沃柑汁的色泽方面也表现出显著优势。综合评价,真空浓缩是一种相对适宜沃柑汁浓缩的方式。
Abstract:Citrus juice is rich in various nutrients and is marketed mainly as fresh juice,lacking the necessary deep processing form,such as concentrated juice.In order to explore the influence of different concentration methods on the quality characteristics of citrus juice,this study adopted four concentration methods,namely,water bath heating concentration(HC),electromagnetic heating concentration(EHC),vacuum concentration(VC),and freezing concentration(FC).Citrus juice was prepared and its quality characteristics are measured.Research results found that the phenolic substances,reducing sugars,organic acids,and amino acids in citrus juice were effectively preserved by the VC treatment method.Compared to other concentration methods,VC increased the content of total phenols,reducing sugars,and organic acid in citrus juice by 5.53%-26.34%,3.15%-11.64%,and 6.80%-165.59%,respectively.Furthermore,the VC treatment method also exhibited significant advantages in preserving the color of citrus juice.Comprehensive evaluation revealed that VC was a relatively suitable way to concentrate citrus juice.
