外源葡萄糖处理对采后杏果实抗病性及贮藏品质的影响

中文摘要: 为研究外源葡萄糖(glucose,Glc)对杏果实采后抗病性及贮藏品质的影响,以Glc作为保鲜剂,并通过减压浸泡的方式对杏果实进行处理,随后进行交孢链格孢(Alternaria alternata)损伤接种试验,接种后置于冷库贮藏,并定期测定相关指标。结果表明:外源Glc处理有效遏制了采后杏果实发病率与病斑直径的增长趋势,显著促进果实中总酚、类黄酮和木质素等次生代谢产物的积累,提高苯丙氨酸解氨酶(phenylalanine ammonia-lyase,PAL)、过氧化物酶(peroxidase,POD)、肉桂酸-4-羟化酶(cinnamic acid-4-hydroxylase,C4H)以及多酚氧化酶(polyphenol oxidase,PPO)等关键酶的活性,有效延缓了果实硬度的降低,同时较好地保持了果实中的可滴定酸(titratable acidity,TA)、抗坏血酸(ascorbic acid,AsA)以及可溶性固形物(soluble solids,SS)的含量。说明外源Glc处理通过调控贮藏期间杏果实苯丙烷代谢相关酶的活性,促进总酚、类黄酮与木质素的积累,进而显著增强采后果实的抗病能力,并能有效维持其贮藏品质。
Abstract:The effects of exogenous glucose(Glc)on postharvest disease resistance and storage quality of apricot fruits were studied.Glc was used as a preservative and apricot fruits were treated by depressurized immersion.Subsequently,Alternaria alternata was inoculated at fruit wounds.After inoculation,the fruits were placed in cold storage,and related indexes were measured regularly.The results showed that the exogenous Glc treatment effectively curbed the growth trend of disease incidence and spot diameter,significantly promoted the accumulation of secondary metabolites such as total phenols,flavonoids,and lignin,and improved the activities of key enzymes such as phenylalanine ammonia-lyase,peroxidase,cinnamic acid-4-hydroxylase,and polyphenol oxidase in inoculated apricot fruits.Meanwhile,the treatment effectively delayed the decrease of fruit firmness and well maintained the content of titratable acid,ascorbic acid,and soluble solids in the fruits.The exogenous Glc treatment promoted the accumulation of total phenols,flavonoids,and lignin by regulating the activities of enzymes related to phenylpropanoid metabolism in apricot fruits during the storage period,which significantly enhanced the disease resistance and effectively maintained the storage quality of the fruits.
