中文摘要: 随着淡水鱼产量和销量的提升,鱼骨、鱼鳍、鱼皮、鱼内脏等副产物的产量也随之提升。这些鱼副产物中含有丰富的蛋白质,可制备具有独特理化性质和生物活性的活性肽。该文综述淡水鱼加工副产物活性肽的来源、制备方法和生物活性等,总结当前生物活性肽研究中存在的问题和不足,以期为淡水鱼活性肽的进一步研究和开发提供新思路。
Abstract:With the increase in freshwater fish production and sales,the production of by-products such as fish bones,fins,skin,and viscera has also increased. These fish by-products contain abundant proteins and can be used to prepare active peptides with unique physicochemical properties and biological activities. The sources,preparation methods,and biological activities of bioactive peptides,as the by-products of freshwater fish processing,were reviewed. In addition,the problems and shortcomings encountered in the current research on bioactive peptides were summarized. The review was expected to provide ideas for further research and development of bioactive peptides in freshwater fish.
