中文摘要: 以山楂、银耳、黑木耳为原料制作山楂银耳果丹皮和山楂黑木耳果丹皮,通过单因素试验探究白砂糖添加量、山楂和银耳质量比或山楂和黑木耳质量比、果胶添加量对产品品质的影响,通过正交试验对山楂复合果丹皮最佳配方进行优化,采用感官评价方法对果丹皮品质进行评定。结果表明:山楂和黑木耳质量比或山楂和银耳质量比、白砂糖添加量、果胶添加量对果丹皮的品质影响显著,以山楂果浆的质量为基准,当银耳打浆处理、白砂糖添加量为35%、山楂和银耳质量比为7∶3、果胶添加量为0.30%时,山楂银耳果丹皮产品品质最佳;当黑木耳胶体磨处理,白砂糖添加量为35%、山楂和黑木耳质量比为8∶2、果胶添加量为0.10%时,山楂黑木耳果丹皮品质最佳。
Abstract:Crataegus pinnatifida,Tremella fuciformis Berk,and Auricularia auricula Underw were used to make Crataegus pinnatifida-Tremella fuciformis Berk composite sweetened roll and Crataegus pinnatifida-Auricularia auricula Underw composite sweetened roll. Single-factor experiments were conducted to investigate the effects of sugar addition amount,the mass ratio of Crataegus pinnatifida and Tremella fuciformis Berk,the mass ratio of Crataegus pinnatifida and Auricularia auricula Underw,and the pectin addition amount on the product quality. The optimal formulation for the composite sweetened roll was optimized using orthogonal experimental design,and its quality was evaluated by sensory evaluation. The results showed that the mass ratio of Crataegus pinnatifida and Tremella fuciformis Berk or that of Crataegus pinnatifida and Auricularia auricula Underw,the sugar addition amount,and the pectin addition amount had a significant effect on the product quality. When Tremella fuciformis Berk was pulped;the sugar addition addition was 35%;the mass ratio of Crataegus pinnatifida and Tremella fuciformis Berk was 7∶3,and the pectin addition amount was 0.30%,the quality of the product was the best. When Auricularia auricula Underw was treated by colloid mill,the best quality of Crataegus pinnatifida-Auricularia auricula Underw composite sweetened roll was obtained based on the quality of hawthorn pulp,with the sugar addition amount of 35%,the mass ratio of Crataegus pinnatifida and Auricularia auricula Underw of 8∶2,and the pectin addition amount of 0.10%.
