3 种李果实采后的品质变化及货架期比较

中文摘要: 为探究李果实在室温贮藏条件下品质及质地的变化规律,以‘国峰2号’、‘国峰7号’、‘国峰17号’李果实为试验材料,在室温贮藏条件下,定期监测果实的品质指标(硬度、失重率、可溶性固形物含量、可滴定酸含量、色差、呼吸强度)以及质地特征(破裂力、挤压做功、黏附性)的动态变化,并进行相关性分析和综合得分。结果表明,3种李果实的货架期分别为‘国峰2号’4 d,‘国峰7号’5 d,‘国峰17号’6 d。综合得分显示,采收时和室温贮藏前2 d,3种李果实品质由高到低依次均为‘国峰7号’、‘国峰17号’、‘国峰2号’;而贮藏3 d后,果实品质由高到低依次为‘国峰17号’、‘国峰7号’、‘国峰2号’。‘国峰7号’李果实在室温贮藏前期品质下降较慢,后期则快速下降;‘国峰17号’李果实贮藏期间品质劣变相对稳定;‘国峰2号’李果实品质始终保持最低。主成分分析结果表明,在室温贮藏条件下,‘国峰2号’和‘国峰17号’贮藏特性更为相似。本研究通过比较3种李果实在室温贮藏条件下的品质变化差异,为特色李品种的最佳货架期的确定提供科学依据和理论参考。

Abstract:To investigate the changes in quality and texture of plum fruits during room temperature storage,fruits of three plum cultivars ('Guofeng 2','Guofeng 7',and 'Guofeng 17') were used as experimental materials. Under room temperature storage conditions,the dynamic changes in quality indices (firmness,weight loss rate,soluble solids content,titratable acidity,color difference,and respiration intensity) and textural characteristics (rupture force,compression work,and adhesiveness) were periodically measured. Correlation analysis and comprehensive evaluation scoring were conducted. The results indicated that the shelf lives of the three plum cultivars were 4 days for 'Guofeng 2',5 days for 'Guofeng 7',and 6 days for 'Guofeng 17'. Comprehensive scores revealed that at harvest and during the first two days of storage,the quality in descending order was consistently 'Guofeng 7'>'Guofeng 17'>'Guofeng 2'. However,from the third day of storage onward,the ranking shifted to 'Guofeng 17'>'Guofeng 7'>'Guofeng 2'. The 'Guofeng 7' fruits exhibited a slower initial quality decline followed by rapid deterioration in later stages. The quality deterioration of 'Guofeng 17' fruits remained relatively stable throughout storage. 'Guofeng 2' fruits consistently maintained the lowest quality level. Principal component analysis (PCA) results for principal component 2 (PC2) suggested that the storage characteristics of 'Guofeng 2' and 'Guofeng 17' were more similar under room temperature conditions. This study,by comparing the differential quality changes among the three plum cultivars during room storage,provides scientific insights and theoretical references for determining the optimal shelf life of distinctive plum varieties.
