椒蒿风味薄脆饼干的制作工艺优化及其品质分析

中文摘要: 以椒蒿粉添加量、赤藓糖醇添加量、食用油添加量、小苏打添加量和烘烤时间作为单因素,以感官评分作为评价指标,利用响应面试验优化椒蒿风味薄脆饼干的加工工艺,并测定饼干的质构、色差、水分含量、脂肪含量、蛋白质含量和风味等理化指标。试验结果表明,赤藓糖醇添加量17.9 g、椒蒿粉添加量3.0 g、烘烤时间12.3 min的工艺下得到的椒蒿风味薄脆饼干的感官品质最佳。理化指标测定结果表明:硬度为(10.44±1.06) N,脆度为(9.29±1.15) N,咀嚼性为(0.74±0.29) N;L*值为45.82±0.20,a*值为6.06±0.05,b*值为27.40±0.03,饼干中的水分含量(1.87±0.12)%,粗脂肪含量(12.70±0.45)%,蛋白质含量(4.26±0.11)%;体外抗氧化测定结果表明,饼干对DPPH自由基、ABTS+自由基和羟基自由基的清除率分别为(46.39±1.01)%、(33.48±0.67)%、(41.30±0.75)%。电子鼻检测结果表明,饼干中含有氮氧化合物、硫化物、吡嗪、萜烯类化合物、芳香族化合物、有机硫化物等风味物质;气相色谱法检测出28种挥发性化合物,其中烃类11种,醇类6种,酯类5种,醚类3种,苯类2种,吡啶类1种。
Abstract:The addition amounts of tarragon (Artemisia dracunculus L.) powder, erythritol, corn oil, and baking soda and the baking time were optimized by single factor tests and response surface methodology with the sensory score of tarragon-flavored crispy biscuits as an indicator. The textural properties, color difference,moisture content, fat content, protein content, and flavor of the biscuits were measured. The results showed that the tarragon-flavored crispy biscuits prepared with the erythritol addition amount of 17.9 g, tarragon powder addition amount of 3.0 g, and baking time of 12.3 min had the best sensory quality. The prepared biscuits had the hardness of (10.44±1.06) N, brittleness of (9.29±1.15) N, chewiness of (0.74±0.29) N, L* value of 45.82±0.20, a* value of 6.06 ± 0.05, and b* value of 27.40±0.03. The moisture, crude fat, and protein content in the biscuits was (1.87±0.12)%, (12.70±0.45)%, and (4.26±0.11)%, respectively. The in vitro antioxidant activity tests indicated that the biscuits exhibited DPPH, ABTS+, and hydroxyl free radical scavenging rates of(46.39±1.01)%,(33.48±0.67)%, and(41.30±0.75)%, respectively. Electronic nose detection revealed that the biscuits contained flavor compounds such as nitrogen oxides, sulfides, pyrazines, terpenoids,aromatic compounds, and organic sulfides. Gas chromatography identified 28 volatile compounds, including 11 hydrocarbons, 6 alcohols, 5 esters, 3 ethers, 2 benzenes, and 1 pyridine.
