超声辅助渗透对热风干燥山药片品质的影响

中文摘要: 新鲜山药易腐烂变质,贮藏期较短。近年来,果蔬干制技术发展迅速,是延伸山药加工产业链的重要手段。为提高干燥速率,减少干燥过程营养损失,采用不同超声条件辅助蔗糖溶液渗透预处理联合热风干燥处理新鲜山药,采用正交偏最小二乘法分析山药片品质的变化。综合评分最高的超声处理条件为超声频率25 kHz、超声功率270 W、超声时间30 min。结果表明:超声处理后的山药片色泽、质地得到改善,蛋白质、还原糖含量也显著增加。超声频率组与超声功率组相比,蛋白质含量较高、硬度和水分活度较低;超声频率组与超声时间组相比,蛋白质含量较高,还原糖含量、L*值及水分活度较低。综上,超声辅助渗透预处理联合热风干燥可显著改善山药片的品质。
Abstract:Fresh Chinese yam (Dioscorea oppositifolia L.) is highly perishable with short storage periods. In recent years, fruit and vegetable drying technology has developed rapidly, which is an important means to extend the Chinese yam processing industry chain. To improve the drying rate and reduce the nutrient loss during the drying process, fresh Chinese yam was treated with ultrasonic-assisted osmotic pretreatment of sucrose solution combined with hot-air drying, and the quality change of Chinese yam chips was analyzed by orthogonal partial least square method. The ultrasonic treatment conditions with the highest comprehensive score were ultrasonic frequency of 25 kHz, ultrasonic power of 270 W, and ultrasonic time of 30 min. The results showed that the color and texture of Chinese yam chips in ultrasonic groups were improved compared with those in the blank group, and the contents of protein and reducing sugar were also significantly increased. Compared with the ultrasonic power group, the ultrasonic frequency group had higher protein content, but lower hardness and water activity. Compared with the ultrasonic time group, the ultrasonic frequency group has higher protein content, but lower contents of reducing sugar, L* value, and water activity. To sum up, ultrasonic-assisted osmotic pretreatment combined with hot-air drying can significantly improve the quality of Chinese yam chips.
