中文摘要: 采用pH偏移-超声联合改性大豆浓缩蛋白(soy protein concentrate,SPC),探究不同浓度的三赞胶(Sanzan gum,SG)对SPC高内相乳液(high internal phase emulsions,HIPEs)的稳定性、持水性、分子间作用力、流变学及3D打印特性的影响,构建可用于3D打印的HIPEs。结果表明:随着SG浓度的增加,HIPEs粒径显著降低,由(26.78±2.55) μm降至(10.27±0.49) μm,其中SPC-SG1.0(SG浓度为1.0%) HIPEs具有最优的热稳定和冻融稳定性,静电作用、二硫键和疏水作用均参与HIPEs的形成。此外,固定水为HIPEs的主要水分形式,SG的加入使SPC-SG HIPEs的持水性由(76.71±2.33)%增加至(94.04±0.11)%。所有样品表现出剪切稀化的特性,其中SPC-SG1.0乳液凝胶具有更致密的网络结构和更高的凝胶强度。相同应变下,SPC-SG1.0的弹性和黏性Lissajous图的封闭面积最大,使其在3D打印中具有较好的自支撑能力和清晰的打印纹路。
Abstract:The soy protein concentrate(SPC) modified by pH-shifting and ultrasound method was adopted to explore the effect of different concentrations of Sanzan gum (SG) on the high internal phase emulsions(HIPEs) of SPC in terms of the stability,water-holding capacity,intermolecular forces,rheology,and 3D printing properties,so as to construct HIPEs suitable for 3D printing. The results demonstrated that as the concentration of SG increased,the particle size of HIPEs decreased significantly from (26.78±2.55) μm to (10.27±0.49) μm. SPC-SG1.0 (SG concentration of 1.0%) HIPEs had optimal thermal and freeze-thaw stability. The electrostatic interactions,disulfide bonds,and hydrophobic interactions were all involved in the formation of HIPEs. In addition,fixed water was the main water form of HIPEs,and the addition of SG enhanced the water holding capacity of SPC-SG HIPEs from (76.71±2.33)% to (94.04±0.11)%. All samples exhibited shearthinning properties,and SPC-SG1.0 emulsion gels had a denser network structure and higher gel strength. At the same strain,SPC-SG1.0 had the largest closed area of elastic and viscous Lissajous plots,which exhibited good self-supporting ability and maintained a clear print pattern during the 3D printing process.
