中文摘要: 为探究发酵藏羊肉肠在冷藏期间食品品质及氧化特性变化,该试验以藏羊肉为原料,接种植物乳杆菌HHLP56和嗜热链球菌HH-ST08制备发酵藏羊肉肠,并测定分析其在4 ℃下贮存1~5 d过程中食用品质、氧化特性和蛋白质结构等指标变化。结果表明,随冷藏时间延长,发酵藏羊肉肠pH值、水分含量、L*值、a*值和总巯基含量呈下降趋势;b*值、保水性、硬度、硫代巴比妥酸值、羰基、二聚酪氨酸含量增加;酸价、弹性和咀嚼性变化不显著,流变特性变化显著(P<0.05);蛋白质结构由规整转向松散。感官评分逐渐下降,且在第4天降至59.67,已丧失其作为食物的食用价值。结果表明,发酵藏羊肉肠冷藏贮存不宜超过3 d,为保证其食用品质,应在发酵成熟后尽快食用。
Abstract:The changes in quality and oxidation properties of fermented Tibetan lamb sausages during cold storage were explored. Tibetan lamb was inoculated with Lactobacillus plantarum HH-LP56 and Streptococcus thermophilus HH-ST08 to prepare fermented Tibetan lamb sausages. The changes in edible quality,oxidation properties,and protein structure of the sausages during the storage at 4 ℃ for 1 to 5 days were determined and analyzed.The results showed that with the extension of the cold storage time,the pH value,moisture content,L* value,a* value,and total sulfhydryl group content of the fermented Tibetan lamb sausages showed a decreasing trend,while the b* value,water holding capacity,hardness,thiobarbituric acid value,carbonyl content,and dityrosine content increased. The changes in acid value,elasticity,and chewiness were not significant,while the changes in rheological properties were significant (P<0.05). The regular protein structure gradually became loose. The sensory score gradually dropped to 59.67 on day 4,which indicated the loss of the value as food. The above results indicated that the cold storage time of fermented Tibetan lamb sausages should not exceed 3 days. The sausages should be consumed as soon as possible after the completion of fermentation to ensure the edible quality.
