中文摘要: 以马蹄丁、粉葛全粉、丝苗米、银耳为主料,并以红豆、花生、薏仁、鹰嘴豆、莲子为辅料,经浸泡、原料预处理、灌装、密封、杀菌等工序,研制一款具有降脂功效的马蹄粥,通过单因素试验和正交优化试验,以DPPH自由基清除能力和感官评分为考察指标进行配方优化,确定最优原料生料比、产品水料比及木糖醇添加量。结果表明,原料生料比(马蹄丁、丝苗米、银耳质量比)为30∶50∶10、产品水料比为5.25∶1(mL/g)、木糖醇添加量为8.0%时,制得的马蹄粥色泽纯正呈褐红色,粥体软糯,口感细腻,马蹄与粉葛的清香味协调,甜度适中,综合评分为96;高脂诱导的果蝇模型实验结果表明,马蹄粥对甘油三酯含量有显著降低作用,马蹄粥具有降脂功效。
Abstract:A kind of water chestnut porridge with the lipid-lowering effect was developed through soaking,raw material pretreatment,filling,sealing,sterilization,and other processes with diced water chestnut,Pueraria thomsonii powder,silk seedling rice,and Tremella fuciformis as the main materials and red beans,peanuts,coix seed,chickpea,and lotus seeds as auxiliary ingredients. Formula optimization was performed by a single factor test and an orthogonal optimization test with DPPH·free radical scavenging ability and the sensory score as evaluation indicators.The optimal ratio of raw materials,ratio of water to material,and xylitol amount were determined.The results showed that in the case of the mass ratio of raw materials(the ratio of diced water chestnut∶silk seedling rice∶Tremella fuciformis)to be 30∶50∶10,the ratio of water to material to be 5.25∶1(mL/g),and the xylitol amount of 8.0%,the water chestnut porridge was pure brownish red in color,soft and glutinous,delicate in taste,harmonious in fragrance between water chestnut and Pueraria thomsonii,and moderate in sweetness with a comprehensive score of 96. The results of the experiment using a Drosophila model induced by high fat showed that the water chestnut porridge could significantly reduce the content of triglyceride in the Drosophila model,namely that the water chestnut porridge had a lipid-lowering effect.
