中文摘要: 以冻藏白糖罂荔枝肉为原料酿造荔枝酒,研究荔枝酒发酵工艺并对最佳发酵条件下制得的荔枝酒进行风味分析。以酒精度及感官评分为评价指标,通过单因素试验考察荔枝果浆预处理的过滤程度、酵母种类、酵母接种量、初始pH值、初始糖度、发酵时间对发酵效果的影响,并采用正交试验优化发酵工艺条件;采用顶空-固相微萃取-全二维气相色谱-飞行时间质谱(headspace solid-phase microextraction comprehensive two-dimensional gas chromatography time-of-flight mass spectrometry,HS-SPME-GC×GC-TOF-MS)联用法对最佳工艺条件下制得的荔枝酒进行风味物质鉴定和分析。结果显示,在120目网筛过滤获得的白糖罂荔枝果浆中添加安琪酵母0.9 g/L,调整体系初始pH5.0、初始糖度21°Bx,在25 ℃下发酵8 d得到的荔枝酒品质最佳,其酒精度为11.5% vol,外观悦目协调、风味独特、果香怡人、口感浓烈爽口、风格良好。风味物质检测和鉴定结果显示,共检出93种化合物,包括醇类32种、醛类8种、酮类9种、酸类7种、酯类21种、呋喃类1种、酰胺类1种、酸酐类1种、芳烃类3种、烯烃类3种、饱和烷烃类1种、其他含氧化合物5种、其他化合物1种,其中醇类、酯类物质含量具有明显优势,赋予荔枝酒独特的风味。
Abstract:Lychee wine was brewed from frozen lychee pulp of the variety'Baitangying'.The fermentation process of lychee wine was studied and the flavor of lychee wine produced under optimal fermentation conditions was analyzed.The effects of the filtration degree of pretreated pulp,yeast species,yeast inoculum amount,initial pH,initial sugar degree,and fermentation time on the fermentation effect were investigated by single factor experiments,and the fermentation conditions were optimized by an orthogonal design. Headspace solidphase microextraction comprehensive two-dimensional gas chromatography time-of-flight mass spectrometry(HS-SPME-GC×GC-TOF-MS)was employed to identify and analyze the flavor substances of lychee wine prepared under the optimum conditions. The results showed that the lychee wine produced by fermentation of the lychee pulp filtrated through a 120-mesh sieve with 0.9 g/L Angel yeast at the initial pH5.0,the initial sugar degree of 21 °Bx,and 25 ℃ for 8 d was of the best quality,with the alcohol content of 11.5% vol,a pleasant and harmonious appearance,a strong and full body,and a pure lychee aroma and wine flavor. A total of 93 compounds were detected in the lychee wine,including 32 alcohols,8 aldehydes,9 ketones,7 acids,21 esters,1 furan,1 amide,1 anhydride,3 aromatic hydrocarbons,3 olefins,1 saturated alkane,5 other oxidecontaining compounds,and 1 other compound. Especially,alcohols and esters with high content endowed the lychee wine with a unique flavor.
