中文摘要: 该研究以未经漂洗的海鲈鱼肉糜为原料,通过测定蒸煮损失率、质构、白度值及感官评分等指标,探究单一脂质以及复合脂质对海鲈鱼肉糜的品质影响,再通过L9(34)正交试验优化脂质最佳添加条件。结果表明,复合脂质比单一脂质的添加效果更优,其中脂质添加量与复合质量比对海鲈鱼肉糜品质具有明显影响。通过正交试验得到海鲈鱼糜最佳脂质添加工艺条件为大豆油与鱼油质量比1∶1、脂质添加量4%。通过对比试验得出该条件下海鲈鱼肉糜品质最佳,感官评分达到89.6。微观结构显示添加复合脂质后的鱼肉糜组织孔隙变小、结构更加紧密。
Abstract:The unrinsed Lateolabrax japonicus minced flesh was used as the raw material.The effects of single and compound lipids on the quality of Lateolabrax japonicus minced flesh were explored by measuring indicators such as cooking loss,texture,whiteness,and sensory evaluation.Finally,the optimal addition conditions of lipids were optimized through the L9(34)orthogonal test.Results indicated that compound lipids had a better addition effect than single lipids. The oil addition amount and compound ratio had a significant impact on the quality of Lateolabrax japonicus minced flesh. The optimal process for adding lipids to Lateolabrax japonicus minced flesh obtained through orthogonal tests required a mass ratio of soybean oil to fish oil of 1∶1,with a lipid addition amount of 4%. Comparative experiments showed that under this condition,the quality of Lateolabrax japonicus minced flesh was the best,with a sensory score of 89.6. The microstructure analysis showed that after adding compound lipids,the pores in the tissue of Lateolabrax japonicus minced flesh became smaller,and the structure was more compact.
