中文摘要: 益生菌因其显著的健康功效被广泛应用于食品和医药领域,但环境胁迫(如胃酸、胆盐)和加工条件(如高温、氧气)易导致其存活率下降。多糖基微胶囊技术通过物理或化学方法将益生菌包埋于天然多糖基质中,可显著提升菌体的胃肠道耐受性和稳定性。该文综述近年来常用多糖材料的特性及其对包埋效率的影响、多糖包埋益生菌的功能化修饰机制以及多糖基益生菌微胶囊的制备方法。同时,针对现有技术的局限性(如包埋率低、缓控释性能不足)提出未来研究方向。
Abstract:Probiotics are widely used in the food and medicine fields due to their significant health benefits,while environmental stress (such as stomach acid and bile salts) and processing conditions (such as high temperature and oxygen) can easily lead to a decrease in their survival rate. The polysaccharide-based microcapsule technology embeds probiotics in the natural polysaccharide matrix through physical or chemical methods,which can significantly enhance the gastrointestinal tolerance and stability of probiotic cells. The characteristics of commonly used polysaccharide materials in recent years and their effects on encapsulation efficiency,the functional modification mechanisms of polysaccharides for encapsulating probiotics,and the preparation methods of polysaccharide-based probiotic microcapsules were reviewed. Finally,future research directions were proposed to address the limitations of existing technologies,such as low embedding rates and poor slowrelease performance.
