富含茶梗可溶性膳食纤维茉莉花茶奶茶的制备工艺优化及其理化性质

中文摘要: 以茉莉花茶、全脂奶粉、赤藓糖醇和茶梗可溶性膳食纤维作为原料开发一款富含茶梗可溶性膳食纤维的茉莉花茶奶茶。在单因素试验的基础上,采用正交试验,对茉莉花茶浸提液以及茉莉花茶奶茶的配方工艺进行研究。确定茉莉花茶浸提液的最佳工艺条件为浸提温度80 ℃、浸提时间10 min、茶水料液比1∶20 (g/mL),此条件下茉莉花茶浸提液的感官评分为88.25±1.27;茉莉花茶奶茶的最佳配比条件为奶粉添加量8 g/100 mL、赤藓糖醇添加量5 g/100 mL、茶梗可溶性膳食纤维添加量2.0 g/100 mL,此条件下茉莉花茶奶茶的感官评分为94.65±0.81。在最佳工艺条件下,茉莉花茶奶茶的理化性质检测结果符合GB/T 21733—2008《茶饮料》规定标准,且茉莉花特征香气的挥发性组分得到较好地保留。此外,适量添加茶梗可溶性膳食纤维能有效提升茉莉花茶奶茶的抗氧化活性,茶梗可溶性膳食纤维添加量为2.0 g/100 mL 时,茉莉花茶奶茶的DPPH 自由基清除率、羟基自由基清除率、ABTS+自由基清除率分别为77.14%、60.99%和57.80%。
Abstract:Jasmine tea milk tea rich in soluble dietary fiber from tea stalks was developed using jasmine tea,whole milk powder,erythritol,and soluble dietary fiber from tea stalks as raw materials. Based on single factor experiment,an orthogonal experiment was conducted to study the formulation technology of jasmine tea extract and jasmine milk tea. The optimum processing conditions of jasmine tea extract were as follows:an extraction temperature of 80 ℃,an extraction time of 10 min,and a solid-liquid (tea-water) ratio of 1∶20 (g/mL). Under these conditions,the sensory score of the jasmine tea extract was 88.25±1.27. The optimal mixing conditions of jasmine milk tea were as follows:a milk powder addition amount of 8 g/100 mL,an erythritol addition amount of 5 g/100 mL,and the addition amount of soluble dietary fiber from tea stalks of 2.0 g/100 mL. Under these conditions,the sensory score of jasmine milk tea was 94.65±0.81. Under the optimal process conditions,the results of the physicochemical properties of jasmine milk tea complied with the standard of GB/T 21733—2008 Tea Beverages. Besides,the volatile components representing the characteristic aroma of jasmine were retained ideally. In addition,the appropriate addition of soluble dietary fiber from tea stalks could effectively improve the antioxidant capacity of the jasmine milk tea. When the addition amount reached 2.0 g/100 mL,the DPPH,hydroxy,and ABTS+ free radical scavenging rates of jasmine tea milk tea were 77.14%,60.99%,and 57.80%,respectively.
