中文摘要: 为探究香辛料对真空包装煮羊肉在贮藏期间品质及风味变化的影响,该试验以添加香辛料和不添加香辛料的煮羊肉为研究对象,真空包装后进行杀菌处理,贮藏28 d。利用气相色谱离子迁移谱(gas chromatography-ion mobility spectrometry,GC-IMS)技术分析贮藏期间煮羊肉的挥发性成分,并检测pH 值、质构特性、色差、挥发性盐基氮(total volatile base nitrogen,TVB-N)和菌落总数的变化。结果表明,在贮藏期间,添加香辛料的羊肉在品质指标方面均优于未添加的样品;添加香辛料的煮羊肉检测出烯烃、萜烯类化合物(如1,8-桉叶醇、己醛、α-蒎烯、β-蒎烯、4-松油醇、枯茗醛、庚醛、柠檬烯、己酸乙酯和γ-松油烯等),香气化合物掩盖样品在贮藏期产生的异味,使羊肉的风味保持较好,表明香辛料对羊肉贮藏期香气成分有改善作用。
Abstract:In order to investigate the effect of spices on the quality and flavor changes of vacuum-packed boiled mutton during storage,the experiments adopted the boiled mutton with or without spices for comparison. After vacuum packaging,they were sterilized and stored for 28 d. The volatile components of the boiled mutton during storage were analyzed by gas chromatography-ion mobility spectrometry(GC-IMS),and the pH,texture,color difference,total volatile base nitrogen (TVB-N),and aerobic plate count were detected. The results showed that the quality of the mutton with spices was better than that of the mutton without spices during storage. The spice treatment boiled mutton presented alkenes and terpene compounds (such as 1,8-eudesmol,hexanal,α-pinene,β-pinene,4-terpilenol,cumaldehyde,heptanal,limonene,ethyl hexanoate,and γ-terpinene). The aroma compounds covered up the peculiar smell of the samples during storage,and the flavor of the mutton was better,indicating that spices had an improving effect on the aroma components of mutton during the storage period.
