中文摘要: 主食作为居民摄取营养与能量的主要渠道,在人们日常生活的饮食组成中不可或缺。然而,传统主食的血糖生成指数(glycemic index,GI)普遍偏高,易导致血糖水平上升。该文综合分析了近些年发表的相关研究论文,旨在明确食品内源性成分对GI 值的影响,并以此为基础提出降低主食GI 值的策略。包括:提高食品配料中的抗性淀粉比率;抑制体内消化酶的活性,及提高蛋白质、脂肪和膳食纤维等可在人体内降解但不生成葡萄糖或在胃及小肠中不被降解的成分的比例。该综述为开发满足我国居民消费需要的低GI 主食产品的加工提供了思路和依据。
Abstract:As the main channel for residents to ingest nutrients and energy,staple food is indispensable in the daily diet composition of people.However,the glycemic index(GI)value of traditional staple food is generally high,which can easily lead to an increase in blood glucose levels. This article comprehensively analyzed research papers published in recent years,clarified the influence of endogenous components in food on the GI value,and proposed strategies to reduce the GI value of staple food. The main strategies included:increasing the ratio of resistant starch in food,inhibiting the activity of digestive enzymes in the body,and increasing the proportion of protein,fat,and dietary fiber that can be degraded in the human body but do not produce glucose,or components will not be degraded in the stomach and small intestines. This review provided ideas and evidence for processing low-GI staple food that meet the consumption needs of Chinese residents.
