中文摘要: 通过单因素、响应面试验优化等外枣片微波真空膨化工艺,探究微波真空膨化、低温真空油炸、传统晾晒3 种不同加工方式对等外枣生物活性物质含量及抗氧化活性的影响。以新疆若羌灰枣等外枣为材料,采用苯酚硫酸法测总糖含量;Folin-Ciocalteu 法测总酚含量;NaNO2-Al(NO3)3 法测定总黄酮含量;比色法测定总三萜酸含量;通过DPPH 自由基清除能力、ABTS+·清除能力、总还原力和羟基自由基清除能力测定3 种加工方式等外枣的抗氧化活性。结果表明,等外枣片最优加工工艺为膨化功率520 W、膨化时间17 min、抽真空时间15 min,该工艺所得等外枣片总酚含量和总黄酮含量均显著高于低温真空油炸等外枣和传统晾晒等外枣;三萜酸含量显著高于低温真空油炸等外枣和传统晾晒等外枣,且微波真空膨化等外枣片的抗氧化活性高于低温真空油炸等外枣及传统晾晒等外枣。
Abstract:The microwave vacuum puffing technique for standard jujube slices was optimized through singlefactor and response surface methodologies,and the effects of three different processing methods—microwave vacuum puffing,low-temperature vacuum frying,and traditional sun-drying method—on the content of bioactive substances and antioxidant activity of substandard jujubes were investigated. With substandard Ruoqiang gray jujubes from Xinjiang as materials,the total sugar content was measured by the phenol-sulfuric acid method;total phenols content were measured by the Folin-Ciocalteu method;total flavonoids content were determined by the NaNO2-Al(NO3)3 method;and total triterpenic acids content were measured by colorimetry.The antioxidant activity of substandard jujubes processed by the above three methods was evaluated according to the DPPH radical scavenging capacity,ABTS+radical scavenging capacity,total reducing power,and hydroxyl radical scavenging capacity.The results indicated that the optimal processing conditions for substandard jujube slices included a puffing power of 520 W,a puffing time of 17 min,and a vacuum time of 15 min. Under these conditions,the total phenol content and total flavonoids content of substandard jujube slices was significantly higher than that of low-temperature vacuum frying and traditionally sun-dried ones;the triterpenic acids content was significantly higher than that of low-temperature vacuum frying and traditionally sun-dried ones. Moreover,the antioxidant activity of the microwave vacuum-puffed substandard jujube slices was higher than that of low-temperature vacuum fryingand traditionally sun-dried ones.
