中文摘要: 怀山药作为河南省焦作市的道地药食两用植物，不仅口感独特，而且具有丰富的营养成分和生物活性成分。鉴于此，越来越多的研究聚焦于怀山药的精深加工，在提高怀山药鲜食价值的同时，也不断深入挖掘其药用方面的应用潜能。该文综述怀山药中多糖、皂苷、多酚、尿囊素、环肽类物质等主要功能成分的生物活性研究进展，着重介绍怀山药的主要功能组分分离、提取方法的研究进展，并对其研究前景进行展望，以期为怀山药在功能食品领域的深入研究提供指导，为进一步精深加工和高附加值开发提供参考。
Abstract:As a local medicinal and edible resource plant in Jiaozuo city，Henan Province，Dioscorea opposita Thunb not only has a unique taste but also is rich in nutrients and biological active ingredients.In light of this，there is increasingly more research focusing on the deep processing of Dioscorea opposita Thunb. While the fresh food value of Dioscorea opposita Thunb is improved，its potential medicine value is also deeply developed.This study reviewed the research progress of biological activities of main functional components，including polysaccharides，saponins，polyphenols，allantoin，and cyclic peptides in Dioscorea opposita Thunb.The separa‐tion and extraction methods were emphasized and the research prospect was proposed to provide a reference for an in‐depth study of Dioscorea opposita Thunb in the food field and further deep processing and high value‐added development.
