中文摘要: 为提高山荆子果酒的品质,将花生根粉添加到山荆子果浆中,酿造外源白藜芦醇强化的功能化山荆子果酒。以果酒白藜芦醇含量和感官评分为考察指标,通过单因素试验确定花生根粉最佳用量;以果酒酒精度和感官评分为考察指标,通过单因素试验和响应面试验优化功能山荆子果酒发酵工艺条件。结果表明,花生根粉在超声功率400 W 条件下预处理30 min 后最佳添加量为0.9 g/100 mL,最佳发酵工艺为初始糖度25°Bx、初始pH3.7、酵母接种量0.21%、发酵温度24 ℃。在此优化条件下,山荆子果酒酒精度为14.6% vol,感官评分为93,白藜芦醇含量为24.2 mg/L。稳定性试验表明:山荆子果酒中白藜芦醇对光照和高温敏感,60 ℃以下避光保存,可以保持稳定。
Abstract:Peanut root powder was added to Malus baccata pulp to improve the quality of M.baccata fruit wine.The functional M. baccata fruit wine fortified with exogenous resveratrol was brewed. With the resveratrol con‐tent and sensory score of fruit wine as evaluation indicators,the optimal amount of peanut root powder was de‐termined by single factor experiments.With the alcohol content and sensory score of fruit wine as evaluation in‐dicators,the fermentation process of functional M. baccata fruit wine was optimized by single factor experi‐ments and response surface methodology. The results showed that the optimal addition amount of peanut root powder after ultrasonic pretreatment at 400 W for 30 min was 0.9 g/100 mL. The optimal fermentation process was as follows:initial sugar degree of 25°Bx,initial pH3.7,yeast inoculation amount of 0.21%,and fermenta‐tion temperature of 24 ℃.Under these optimized conditions,the functional M.baccata fruit wine showed the al‐cohol content of 14.6% vol,a sensory score of 93 points,and the resveratrol content of 24.2 mg/L. Resveratrol in the fruit wine was sensitive to light and high temperatures,while it remained sTablewhen the fruit wine was stored in a dark place below 60 ℃.
