来安花红果汁贮藏稳定性评价与货架期预测

中文摘要: 为了解贮藏温度和杀菌方式对来安花红果汁贮藏稳定性的影响,该文采用辐照、热杀菌、高温瞬时杀菌3 种杀菌方式对来安花红原果汁进行处理,分别在5、10、20 ℃下贮藏,并定期对其品质特性和菌落总数进行分析。结果显示,贮藏期间果汁中总酚、总可溶性固形物、抗坏血酸含量和感官评分均整体呈明显下降趋势,总酸含量整体呈上升趋势。Pearson 相关性分析显示,果汁中抗坏血酸、总酚含量与感官评分呈正相关。以总酚和抗坏血酸含量结合Arrhenius 方程建立花红原果汁货架期预测模型,所建立模型的相关系数R2>0.9。5 ℃下,经辐照、热杀菌、高温瞬时杀菌,以总酚和抗坏血酸为指标进行预测的货架期分别为181.54、145.51、163.18 d 和180.29、134.18、174.55 d。结果表明,高温瞬时杀菌比较适合花红原果汁,所得果汁中可保留更多的营养组分。此外,果汁中总酚和抗坏血酸含量变化与果汁感官评分明显相关,可用于花红果汁货架期预测。
Abstract:To explore the influence of storage temperatures and sterilization methods on the storage stability of Lai′an Malus asiatica juice,this study used three sterilization methods,namely irradiation sterilization,thermal sterilization,and high‐temperature short‐time sterilization to deal with Lai′an Malus asiatica juice and stored them at temperatures of 5,10 ℃,and 20 ℃,respectively.During the storage,the quality properties and aerobic plate count of the fruit juice were analyzed regularly. The results showed that during the storage,the total phe‐nol content,total soluble solids,ascorbic acid content,and sensory evaluation of the fruit juice decreased,while the total acid content increased.Pearson correlation analysis showed that the content of total phenols and ascorbic acid in the fruit juice was significantly positively correlated with sensory evaluation. A shelf life pre‐diction model for Malus asiatica juice was established by combining the total phenol and ascorbic acid content with the Arrhenius equation,and the correlation coefficient R2 of the established model was>0.9. At 5 ℃,the predicted shelf life based on total phenol and ascorbic acid content after irradiation,thermal sterilization,and high‐temperature short‐time sterilization was 181.54,145.51 d,and 163.18 d,as well as 180.29,134.18 d,and 174.55 d,respectively. The results indicated that high‐temperature short‐time sterilization was more suiTablefor Malus asiatica juice,and the resulting juice could retain more nutritional components. In addition,the changes in total phenol and ascorbic acid content in the fruit juice were significantly correlated with the sen‐sory quality of the fruit juice,which could be used for predicting the shelf life of Malus asiatica juice.
