中文摘要: 以李光杏为原料,采用弱微波辅助干燥空气技术进行干燥,研究不同载物量、不同物料分布及不同微波发射器对杏脯干燥特性的影响。采用4 种干燥模型对干燥过程中水分比与干燥循环次数的关系进行回归拟合以构建干燥动力学模型。结果表明,不同载物量、物料分布位置及发射器对干燥特性均有影响。其中载物量影响最大,干燥盘载物越少,干燥速率越快,恒重所需时间越短,载物量为100 g 时,循环次数相较于900 g 组循环减少80 次。干燥过程中分为降速和恒速两阶段,3 种因素下干燥初期均为降速过程,循环至60 次时逐步进入恒速阶段。通过比较决定系数、χ2、平均偏差和均方根标准差,Page 模型在杏脯的弱微波辅助干燥空气干燥过程中能较好地预测干燥过程。
Abstract:Liguang apricots were processed by weak microwave‐assisted air drying,and the effects of different loading amounts,material distribution positions,and microwave emitters on the drying characteristics were in‐vestigated. Four drying models were used to fit the relationship between the moisture ratio and the number of drying cycles,and the dynamic models of drying were established. The results showed that different loading amounts,material distribution positions,and emitters all affected the drying characteristics. Among them,the loading amount had the greatest influence. A small loading amount on the tray promoted drying,which short‐ened the time required to reach the constant weight.When the loading amount was 100 g,the number of drying cycles was reduced by 80 compared with that in the 900 g group. The drying process was divided into two stages characterized by a falling drying rate and a drying constant rate.Under the three factors,the initial stage of drying all presented a falling drying rate,and the drying rate became constant after 60 cycles.Comparison of the coefficient of determination,chi‐square,average deviation,and root mean square deviation showed that the Page model could well predict the weak microwave‐assisted air drying process of apricots.
