中文摘要: 为改善普洱熟茶的醇厚味,以感官评定和可溶性果胶含量等为主要评价指标,筛选适宜的水解酶对普洱熟茶进行酶解处理,并采用单因素和正交试验设计优化酶解的工艺参数。结果表明:采用果胶酶酶解得到的茶汤具有较好的醇厚感官品质与较高的可溶性果胶含量,因此选用果胶酶进行酶解。经正交试验优化后得到的最佳酶解工艺为酶添加量0.30%、酶解温度45 ℃,酶解时间3.5 h。该优化工艺下制得的酶解普洱熟茶茶汤醇厚口感明显,各项感官接受度良好,可溶性果胶含量可达357.927 mg/L。

Abstract:In order to improve the mellow and thick taste of Pu-erh ripe tea, the sensory evaluation and soluble pectin content were used as the main quality indexes. Suitable hydrolase enzymes were screened to carry out enzymatic treatment of Pu-erh ripe tea, and one-way and orthogonal experimental designs were conducted to optimize the process parameters of enzymatic treatment. The results showed that the tea infusion prepared by enzymatic hydrolysis with pectinase had better mellow and thick sensory quality and higher soluble pectin content. Therefore, pectinase was selected for enzymatic treatment, and the optimal enzymatic process after orthogonal optimization was as follows: enzyme additive amount of 0.30%, enzymatic temperature of 45 ℃, enzymatic time of 3.5 h. The enzymatic tea infusion prepared by the optimized process had a superior mellow and thick taste and good acceptance for all sensory evaluations, and the content of soluble pectin reached 357.927 mg/L.
