中文摘要: 为探究云南特色丘北辣椒品种云干椒7 号(Y7)和传统丘北辣(QB)在不同生育期的代谢产物差异,利用液相色谱-质谱(liquid chromatography-mass spectrometry,LC-MS)法比较分析两品种在绿熟期和红熟期的非靶向代谢物质。结果表明,代谢物的数量、组分因生育期、品种差异而表现不同。红熟期的代谢物数量明显高于绿熟期,QB 中的差异代谢物显著高于Y7;两品种中特有的甘油磷脂类、黄酮类、辣椒素类以及氨基酸类等代谢物丰度较高,可以作为鉴别Y7 和QB 的潜在生物标志。京都基因与基因组百科全书(Kyoto Encyclopedia of Genes and Genomes,KEGG)富集分析发现Y7 和QB 在两生育期的关键代谢通路主要富集在脂质代谢。L-谷氨酸、蔗糖、海藻糖等差异代谢物被注释到与果实发育、转色相关的ABC 转运蛋白(ATP-binding cassette transporter)、次生代谢生物合成、苯丙烷代谢等通路。综上,Y7 和QB 的代谢成分各有优势,不仅为营养功能评价提供基础,也为干制辣椒的高品质育种与采收提供理论参考。

Abstract:This study explored the differences of metabolites in Yunnan Qiubei chili at different growth stages.The nontargeted metabolites from Yun dried chili No.7(Y7)and traditional Qiubei chili(QB)in green and red ripe stages were discussed respectively by liquid chromatography-mass spectrometry(LC-MS). It was found that the quantity and component varied with different growth stages and varieties.The quantity of metabolites in red ripe stage was significantly higher than that in green ripe stage,while the differential metabolites in QB exceeded those in Y7. Metabolites such as glycerophospholipids,flavonoids,capsaicin,and amino acids were abundant in the two varieties,which could be used as potential biomarkers to distinguish Y7 and QB.According to the enrichment analysis of the Kyoto Encyclopedia of Genes and Genomes(KEGG),the key metabolic pathways of Y7 and QB in the two growth stages were mainly enriched in lipid metabolism. In addition,different metabolites such as L-glutamate,sucrose,and trehalose were annotated into pathways related to fruit development and color transformation,including ATP-binding cassette transporter,secondary metabolic biosynthesis,and phenylpropane metabolism. In conclusion,the metabolic components of Y7 and QB had their advantages. They provided not only the basis for nutritional function evaluation but also theoretical reference for high-quality breeding and harvesting of dried chili.
