不同产地印度块菌中营养成分分析

中文摘要: 为评价国内不同产地印度块菌的营养价值,该研究以云南昆明、云南保山、辽宁大连3 个产地的新鲜印度块菌作为样品,依据相关食品安全国家标准对其一般营养成分、氨基酸、脂肪酸、矿物元素的含量进行检测分析,同时对5 种重金属含量及200 多种农药残留成分进行检测和安全性评价。结果表明:一般营养成分方面,昆明印度块菌的脂肪含量较高,保山印度块菌的膳食纤维含量较高,大连印度块菌的灰分、蛋白质、粗多糖含量均高于昆明和保山。3 个产地的印度块菌中均检出16 种氨基酸,脂肪酸组成中不饱和脂肪酸显著高于饱和脂肪酸含量,矿物元素含量丰富,常量元素含量较高的依次为钾、磷、钙,微量元素含量较高的依次为铜、铁、锌。不同产地的印度块菌营养成分差异显著,整体上大连产地的印度块菌营养成分高于云南产地。
Abstract:In order to evaluate the nutritional value of Tuber indicum from different areas in China,fresh Tuber indicum from Kunming and Baoshan,Yunnan Province,as well as Dalian,Liaoning Province were used as samples. The contents of general nutritional components,amino acids,fatty acids,and mineral elements were detected and analyzed according to relevant national food safety standards,while the contents of five heavy metals and more than 200 pesticide residues were tested and evaluated for safety.The results showed that in terms of general nutritional components,the fat content of Tuber indicum from Kunming was higher,and the dietary fiber content of Tuber indicum from Baoshan was higher;the ash,protein,and crude polysaccharide contents of Tuber indicum from Dalian were higher than those from Kunming and Baoshan. 16 kinds of amino acids were detected in Tuber indicum from the three areas. In the composition of fatty acids,unsaturated fatty acids were significantly higher than saturated fatty acids.The mineral elements were rich.Major elements with higher contents were potassium,phosphorus,and calcium,and trace elements with higher contents were copper,iron,and zinc.The nutritional components of Tuber indicum from different areas were significantly different.Overall,the nutritional components of Tuber indicum from Dalian were higher than those from Yunnan.
