中文摘要: 为探究信阳毛尖茶生化成分与海拔的关系,该研究以不同海拔的信阳毛尖茶为对象,测定茶样的主要生化成分含量,并结合多元统计分析,明确不同海拔信阳毛尖茶的生化成分差异。结果表明,低海拔茶样中游离氨基酸、没食子酸、儿茶素、表儿茶素、表儿茶素没食子酸酯和非酯型儿茶素含量更高,咖啡碱、黄酮类物质、表没食子儿茶素、表没食子儿茶素没食子酸酯、酯型儿茶素和儿茶素总量在高海拔茶样中含量更高;多元统计分析表明,信阳毛尖茶可根据海拔进行区分,儿茶素、表没食子儿茶素没食子酸酯、非酯型儿茶素和酯型儿茶素是区分不同海拔信阳毛尖茶的关键差异性成分。
Abstract:This study aimed to explore the relationship between the biochemical components and the altitude of Xinyang Maojian tea.The main biochemical components of Xinyang Maojian tea at different altitudes were determined,and the differences in these components were clarified by multivariate statistical analysis.The results showed that free amino acids,gallic acid,catechins,epicatechin,epicatechin gallate,and non-ester catechins were higher in the low-altitude tea samples.In contrast,caffeine,flavonoids,epicatechin,epicatechin gallate,ester catechins,and total catechins were higher in the high-altitude tea samples.The multivariate statistical analysis showed that Xinyang Maojian tea could be distinguished based on altitude.Catechin,epigallocatechin gallate,non-ester catechin,and ester catechin were identified as key differential biochemical compounds for distinguishing Xinyang Maojian tea at different altitudes.
