不同产区沙田柚化学成分及果实品质比较

中文摘要: 为比较产地对沙田柚品质的影响,该试验以我国广东和广西地区的沙田柚为研究对象,对沙田柚的果重、皮厚、种子数、果形指数、可溶性固形物含量、可滴定酸含量、固酸比、果皮中的挥发性化合物、果肉中的可溶性糖、有机酸、维生素C、蛋白质、总酚及总黄酮含量进行分析比较。研究结果表明:广东和广西沙田柚挥发性化合物组成和含量基本类似,主要均为柠檬烯(含量超过93%),二者柠檬烯含量差异不显著。但α-胡椒烯、金合欢烯、2,4-二叔丁基酚和棕榈酸仅在广东沙田柚中检出,而香叶醇、金合欢醇和乙酸橙花酯则仅在广西沙田柚中检出。两地沙田柚果肉中总酚、蛋白质和总黄酮含量无显著性差异。但是广西沙田柚果肉中的维生素C 含量、可溶性固形物含量、固酸比和蔗糖含量分别是广东沙田柚的1.17、1.12、1.12、1.56 倍,均显著高于广东沙田柚(p<0.05)。而广西沙田柚中的柠檬酸含量则只有广东沙田柚的68%,显著低于广东沙田柚(p<0.05)。说明广西沙田柚口感更甜,品质上要略优于广东沙田柚。

Abstract:In order to compare the influence of origin on the quality of Shatian pomelo,this study focused on Shatian pomelos from Guangdong and Guangxi regions in China.Fruit weight,peel thickness,seed count,fruit shape index,soluble solid content,titratable acidity,solid-acid ratio,volatile compounds in the peel,soluble sugars,organic acids,vitamin C,protein,total phenols,and total flavonoid content in the pulp were analyzed and compared.The results showed that the composition and content of volatile compounds in Shatian pomelos from Guangdong and Guangxi were basically similar,with limonene being the main component(content exceeding 93%),and the difference in limonene content between the two was not significant.However,αpinene,farnesene,2,4-di-tert-butylphenol,and palmitic acid were only detected in Guangdong Shatian pomelos,while geraniol,farnesol,and neryl acetate were only detected in Guangxi Shatian pomelos.There were no significant differences in the total phenol,protein,and total flavonoid content in the pulp of Shatian pomelos from the two regions.However,the vitamin C,soluble solids,solid-acid ratio,and sucrose content in the pulp of Guangxi Shatian pomelos were 1.17,1.12,1.12,and 1.56 times that of Guangdong Shatian pomelos,respectively,all significantly higher than those of Guangdong Shatian pomelos(p<0.05).The citric acid content in Guangxi Shatian pomelos was only 68% of that in Guangdong Shatian pomelos,significantly lower than that in Guangdong Shatian pomelos.This indicated that Guangxi Shatian pomelos had a sweeter taste and slightly better quality than Guangdong Shatian pomelos.
