中文摘要: 机械损伤是鲜活果蔬采后常见的损伤之一。机械损伤会导致果蔬出现细胞膜破裂、营养与水分流失、果蔬呼吸速率加剧、成熟进程加快、果蔬软化、微生物侵染几率增加,严重影响鲜活农产品的质量和保质期,同时机械损伤会引发果蔬产生相应防御反应。清楚地了解机械损伤机制以及危害对于果蔬采后品质的优化控制至关重要。该文系统论述有关机械损伤对鲜活果蔬采后品质影响的研究进展,综述果蔬机械损伤现有的控制技术,旨在为鲜活农产品的运输贮藏提供理论指导。
Abstract:Mechanical damage is one of the common postharvest injuries in fresh fruits and vegetables.Mechanical damage will lead to cell membrane rupture,nutrient and water loss,increased respiration rate of fruits and vegetables,accelerated ripening process,softening of fruits and vegetables,and increased probability of microbial infection,which will seriously affect the quality and shelf life of fresh agricultural products.At the same time,mechanical damage can trigger corresponding defense responses in fruits and vegetables,such as the synthesis of phenols.A clear understanding of the mechanisms and hazards of mechanical damage is essential for optimal control of postharvest quality of fruits and vegetables.This paper systematically discusses the research progress on the effect of mechanical damage on the postharvest quality of fresh fruits and vegetables,and reviews the existing control technologies of mechanical damage of fruits and vegetables,so as to provide a theoretical guidance for the transportation and storage of fresh agricultural products.
