雨生红球藻蛋白稳定的Pickering乳液对酒精性肝损伤的保护作用

中文摘要: 该文利用雨生红球藻蛋白制备Pickering 乳液,在评估其在肠液中可消化性的基础上,构建急性酒精性肝损伤小鼠模型,对雨生红球藻蛋白稳定的Pickering 乳液的酒精性肝损伤保护作用进行评价。相比于模型组,雨生红球藻蛋白稳定的Pickering 乳液干预能在一定程度上缓解酒精引起的肝脏肿胀。对小鼠的肝脏及胃组织进行病理学切片观察,发现Pickering 乳液能明显改善酒精性肝损伤小鼠肝脏及胃组织中细胞结构紊乱、细胞融合以及炎症细胞的堆积情况。另外,相比于模型组,雨生红球藻蛋白稳定的Pickering 乳液组可显著降低小鼠血清中谷丙转氨酶63.9%、谷草转氨酶31.8%、总胆固醇37.5%和肝脏中丙二醛含量20.8%(p<0.05),同时,可显著提高小鼠肝脏中还原型谷胱甘肽含量44.5%(p<0.05)。结果表明,雨生红球藻蛋白稳定的Pickering乳液对急性酒精性肝损伤具有一定的保护和改善作用。
Abstract:The Pickering emulsion was prepared with Haematococcus pluvialis protein.On the basis of evaluating its digestibility of the emulsion in the intestinal fluid,a mouse model of acute alcoholic liver injury was established to evaluate the protective effect of the Pickering emulsion stabilized by H.pluvialis protein on alcoholic liver injury.Compared with the model group,the intervention with Pickering emulsion stabilized by H.pluvialis protein alleviated the liver swelling caused by alcohol.The pathological sections of the liver and stomach tissues of mice were observed.Pickering emulsion significantly mitigated the cell disarrangement and fusion and the accumulation of inflammatory cells in the liver and stomach tissues of mice induced by alcohol.In addition,the Pickering emulsion significantly lowered the serum levels of alanine aminotransferase,aspartate aminotransferase,and total cholesterol by 63.9%,31.8%,and 37.5%,respectively,and reduced the content of malondialdehyde by 20.8% in the liver(p<0.05)compared with the model group.Meanwhile,it significantly increased the content of glutathione in the liver of mice by 44.5%(p<0.05).The results demonstrated that the Pickering emulsion stabilized by H.pluvialis protein protected mice from acute alcoholic liver injury.
