中文摘要: 近年来,由于衍生化技术的发展,基于气相色谱-质谱(gas chromatography-mass spectrometry,GC/MS)的代谢组学技术正在成为分析挥发性化合物和非挥发性化合物的常用工具。该文从食品鉴别与鉴定、代谢物表征分析、非生物性应激反应评估、食品采后加工优化、食品生长和加工过程监测、食品质量评估与预测、食品货架期和保藏期评估等方面综述GC/MS 代谢组学技术在食品领域中的应用进展,为食品代谢组学研究及改进食品工业的生产过程提供参考。
Abstract:In recent years,gas chromatography-mass spectrometry(GC/MS)based metabolomics techniques are becoming a common tool for analyzing volatile and non-volatile compounds due to the development of derivatization techniques.This review summarized the progress of GC/MS metabolomics technology in the food industry,including food differentiation and identification,metabolite characterization analysis,assessment of abiotic stress responses,optimisation of post-harvest food processing,monitor food growth and processing,food quality assessment and prediction,and assessment of shelf-life and shelf-life of food.It aimed to provide a reference for food metabolomics research and improve the production process of the food industry.
