中文摘要: 食叶草是一种新型的可食性植物资源,通过一定的加工处理可以制成多种高营养价值、高附加值的新型食品。该文通过对食叶草的安全性、营养成分、主要功效及应用现状4 个方面进行综述,分析食叶草目前在应用中存在的问题,并对食叶草在食品产业的发展前景进行分析和展望,以期为开展食叶草功能成分的基础研究和开发食叶草新型产品提供理论依据,进一步加快食叶草的深入开发和利用。

Abstract:Edible dock is a new type of edible plant resource,which can be made into a variety of new foods with high nutritional value and added value through certain processing.In this paper,the safety,nutritional components,main functions,and application status of edible dock were reviewed,and the existing problems in the application of edible dock were also analyzed.The development prospect of edible dock in food industry was analyzed and prospected,so as to provide theoretical basis for basic research on functional components of edible dock and the development of new products of this herb,and accelerate the further development and utilization of edible dock.
