中文摘要: 金枪鱼富含多不饱和脂肪酸、蛋白质、矿物质、维生素等活性物质,具有抗血栓、抗疲劳、提高机体免疫力等功效。目前金枪鱼保鲜加工技术主要以冰鲜加工和冷冻加工为主,加工产品集中在生鱼片、罐头、鱼干制品及复合产品等方面。该文主要介绍金枪鱼的营养成分和功能,对金枪鱼的保鲜加工进展进行概述,并在其基础上探讨多种金枪鱼产品的制作工艺,展望其发展前景,以期为金枪鱼产品的深度开发提供思路。

Abstract:Tuna is rich in polyunsaturated fatty acids,proteins,minerals,vitamins,and other active substances,with multiple effects in resisting thrombosis and fatigue and improving the body's immunity.At present,the fresh-keeping processing technology of tuna is mainly chilled processing and frozen processing,and the processed products are concentrated in sashimi,canned foods,dried products,and composite products.This paper mainly introduced the nutritional composition and functions of tuna,summarized the progress on fresh preservation and processing of tuna,discussed the production process of a variety of tuna products,and prospected its development in order to provide ideas for the in-depth development of tuna products.
