中文摘要: 燕窝富含多种营养成分,不仅包括蛋白质、糖类、脂肪、维生素和多种无机元素等常见营养成分,还包括唾液酸和表皮生长因子等生物活性物质。燕窝因具有抗氧化、抗衰老、抗病毒、免疫调节、促进生长和发育等生理功能,逐渐被众多研究者们关注并开展研究。该文归纳总结燕窝中各种营养成分及其含量,综述燕窝及其提取物的功能研究进展,并对未来燕窝及其活性成分的研究趋势进行展望,以期为燕窝的功能性产品开发提供依据。
Abstract:Edible bird's nest is rich in a variety of nutrients,including common nutrients such as protein,sugar,fat,vitamins and numerous inorganic elements,as well as bioactive substances such as sialic acid and epidermal growth factor.With the physiological functions of anti-oxidation,anti-aging,anti-virus,immune regulation and promoting growth and development,edible bird's nest has gradually attracted the attention of more and more researchers.In this review,the nutrients and their content in edible bird's nest were summarized,and the functions of edible bird's nest and its extracts were introduced.In addition,the research trends of edible bird's nest and its active ingredients in the future were prospected.This study was expected to provide a basis for developing the functional products of edible bird's nest.
