中文摘要: 作为一种新型的绿色溶剂,低共熔溶剂(deep eutectic solvent,DES)具有无毒、制备简单、生物降解性高、100%原子利用率等优点。随着对低共熔溶剂研究的不断深入,其在食品工业中的研究日趋广泛。该文概述低共熔溶剂的制备方法,综述近年来低共熔溶剂在提取分离功能因子、分析检测有毒有害物质、食品包装和生物技术等食品工业中的应用,旨在为低共熔溶剂的进一步深入研究和产业化奠定基础。
Abstract:As a new green solvent,deep eutectic solvent is characterized by non-toxicity,simple preparation,high biodegradability,and 100% atomic efficiency. With the deepening of research,the application of deep eutectic solvent in food industry has been extensively studied.The preparation methods of deep eutectic solvent were introduced.Further,the applications of deep eutectic solvent in the food industry in recent years,such as the extraction and separation of functional factors,the analysis and detection of toxic and harmful substances,food packaging,and biotechnology,were reviewed,which can lay a foundation for further research and industrialization of deep eutectic solvent.
