中文摘要: 随着近年来食品工业的快速发展,食用油脂的需求量越来越大,因此采用高效的萃取方法变得尤为重要。与传统的溶剂萃取不同,超声辅助提取技术具有提取效率高、提取时间短的优势。超声辅助提取技术利用空化效应、机械作用等破坏细胞壁,进而促进溶剂对脂质的萃取。该文主要论述用于超声辅助提取的原料及其提取机理,同时综述超声辅助提取技术对油脂的提取效果及影响其提取率的因素,总结用于油脂提取中与超声技术组合的耦合技术,为超声辅助提取技术在食品脂质中的应用提供理论支持。
Abstract:With the rapid development of food industry in recent years,the demand for edible oil is increasing,so it is particularly important to use efficient extraction methods. Compared with traditional solvent extraction,ultrasound-assisted extraction has high efficiency and consumes short time. This technology uses cavitation effect,mechanical effect,etc.to destroy cell walls,thereby promoting the solvent extraction of lipids. The raw materials for ultrasound-assisted extraction and the corresponding extraction mechanisms were introduced.Further,the performance of ultrasound-assisted extraction of oil and the factors affecting the extraction yield were reviewed. The coupling technology of ultrasound technology in oil extraction was summarized,which provided theoretical support for the application of ultrasound-assisted extraction technology in the production of food lipids.
