(As important food for human beings，cereals are rich in nutrients such as starch and protein，and are also a good source of protein α-amylase inhibitors （α-AI）.α-AI is a class of substance that inhibits glycoside hydrolase，with hypoglycemic，hypolipidemic，weight loss，and anthelmintic effects.Thus，it is widely used in medicine and agriculture.This paper reviewed the separation，purification，detection，and functional characteristics of α-AI in cereals，and prospected its application in food and other fields.)

中文摘要: 谷物是人类重要的食物，含有丰富的淀粉、蛋白质等营养物质，同时也是蛋白类α-淀粉酶抑制剂的良好来源。α-淀粉酶抑制剂（α-amylase inhibitor，α-AI）是一类具有抑制糖苷酶水解作用的物质，具有降血糖、降血脂、减肥及抗虫等作用，在医学与农业方面都有广泛的应用。该文对谷物中蛋白类α-AI的分离纯化、检测方法、功能特性等进行综述，并对其在食品及其它领域的应用前景进行展望。

Abstract:As important food for human beings，cereals are rich in nutrients such as starch and protein，and are also a good source of protein α-amylase inhibitors （α-AI）.α-AI is a class of substance that inhibits glycoside hydrolase，with hypoglycemic，hypolipidemic，weight loss，and anthelmintic effects.Thus，it is widely used in medicine and agriculture.This paper reviewed the separation，purification，detection，and functional characteristics of α-AI in cereals，and prospected its application in food and other fields.
