Abstract:Mulberry has a high medicinal value，owing to its liver-protecting，anti-tumor，anti-inflammatory，and blood glucose-lowering activities.These functions are correlated with the unique active substances such as phenols，polysaccharides，amino acids，minerals，and vitamins in the fruit.China is rich in mulberry resources，and the development of active substances by processing and utilization of natural resources can improve the value and resource utilization of mulberry.This article introduces the active substances in mulberry and summarizes the research progress in the processing and utilization of mulberry fruit in recent years，with a view to providing reference for the future research on the deep processing of mulberry fruits and the innovative development of functional products.
