复合酶法提取对黑果腺肋花楸不溶性膳食纤维结构及功能特性的影响

中文摘要: 以黑果腺肋花楸果渣(Aronia melanocarpa pomace,AMP)为原料,采用复合酶法提取不溶性膳食纤维(insoluble dietary fiber,IDF)并分析比较IDF和AMP的微观结构、官能团、单糖组成、持油性、持水性、水膨胀能力和亚硝酸盐、葡萄糖吸附能力;通过单糖组成研究酶对细胞壁结构的影响。结果表明,复合酶法提取的不溶性膳食纤维具有复杂的微观结构,具有不溶性膳食纤维的特征吸收峰。IDF的持油性、持水性和水膨胀能力的测定结果分别为(3.40±0.02)、(3.80±0.02)g/g和(2.23±0.01)mL/g,与 AMP 相比均显著提高(P<0.05)。IDF 和 AMP 对 NO2-的吸附发生在胃中,即 pH值为2.0时进行吸附,此时IDF对NO2-的吸附量为(51.20±0.12)mg/g。IDF和AMP对葡萄糖的吸附效果随葡萄糖浓度的增加而提高,并且IDF对葡萄糖表现出更好的吸附能力。
Abstract:The insoluble dietary fiber(IDF)was extracted from Aronia melanocarpa pomace(AMP)by complex enzyme method,and the microstructure,functional group,monosaccharide composition,oil holding capacity,water holding capacity,water swelling capacity,and nitrite and glucose adsorption capacity of IDF and AMP were analyzed and compared.The effect of enzymes on cell wall structure was studied by monosaccharide composition.The results showed that the IDF extracted by enzymatic method had a complex microstructure and a characteristic absorption peak of IDF.The determination results of oil retention,water retention,and water swelling capacity of IDF were(3.40±0.02),(3.80±0.02)g/g and(2.23±0.01)mL/g,respectively,which were signific-antly higher than those of AMP(P<0.05).The absorption of NO2-by IDFand AMP occurs in the stomach,that was,when the pH value was2.0,the absorption of NO2-by IDF was(51.20±0.12)mg/g.The adsorption effect of IDF and AMP on glucose increased with the increase of glucose concentration,and IDF showed better adsorption capacity on glucose.
