中文摘要: 为评估马乳酒样乳杆菌马乳酒样亚种ZW3食用安全性及健康风险,对ZW3进行系统的体外和体内毒理学实验,包括SD大鼠急性经口毒性实验、细菌回复突变实验、小鼠骨髓细胞微核实验和仓鼠卵巢细胞染色体畸变实验。急性经口毒性实验表明:ZW3的LD50大于10.0 g/kg体重;细菌回复突变实验结果显示:ZW3对5株测试菌株无诱变特性,在小鼠骨髓细胞微核实验中ZW3不会导致哺乳动物嗜多染红细胞含微核细胞率增加;仓鼠卵巢细胞染色体畸变实验结果表明:ZW3的不同剂量组中染色体异常细胞和染色体畸变率均与阴性对照组无明显差异。综合评价,马乳酒样乳杆菌马乳酒样亚种ZW3属于实际无毒级,并且不存在遗传毒性、致突变和致癌性。
Abstract:To evaluate the safety and health risks of Lactobacillus kefiranofaciens subsp.kefiranofaciens ZW3,the present study carried out the toxicological evaluation of ZW3 by systematic in vitro and in vivo toxicological tests,including acute oral toxicity test on SD rats,bacterial reverse mutation(Ames)test,micronucleus assay in mice,and in vitro chromosomal aberration assay.The acute oral toxicity test showed that the LD50of ZW3 was greater than 10.0 g/kg BW.The results of the Ames test showed that ZW3 had no mutagenic properties to the five tested strains.In the micronucleus assay of mouse bone marrow cells,ZW3 did not cause an increase in the micronuclei-containing rate of mammalian polychromatic erythrocytes.The results of the chromosomal aberration assay in vitro showed that chromosomal abnormal cells and chromosome aberration rates in ZW3 groups with different doses were not significantly different from those in the negative control group.According to the comprehensive evaluation,L.kefiranofaciens subsp.kefiranofaciens ZW3 was at the actual non-toxic level,without genetic toxicity,mutagenicity,and carcinogenicity.
