泡菜母水细菌群落组成及潜在基因功能分析

中文摘要: 为探究泡菜母水中细菌群落组成及潜在功能基因的多样性,采用扩增子测序变体对密闭储存于25℃下、培养不同时长的泡菜母水中细菌群落组成进行分析,并对所得细菌序列进行基因功能预测分析。储存1、8、30 d的泡菜母水中细菌alpha多样性存在差异,但其优势菌群组成相似。从泡菜母水获得细菌20门、33纲、79目、92科、320属、388种。门水平上:厚壁菌门和变形菌门占比均较高,在1、8、30 d中占比分别为52.52%和52.96%、47.55%和47.46%、45.68%和52.17%。泡菜母水中优势属(占总体系含量>1%)有8个:肠杆菌属、明串珠菌属、未分类的肠杆菌属、乳球菌属、柠檬酸杆菌属、未分类的乳杆菌属、未分类的乳酸杆菌属、拉恩氏菌属;稀有属(占总体系含量<0.01%)种类较多,共有99个,在不同储存时长泡菜母水中的组成差异较大;未能鉴别的细菌类群有1门38科89属173种。泡菜母水中能够注释的功能基因有6个类型364种,主要与新陈代谢、遗传信息、细胞转化、致病、环境信息处理和有机系统相关。
Abstract:The bacterial community composition of Paocai brine stored at 25 ℃ and cultured at different times were analyzed by amplicon sequence variants sequencing technology to explore community composition and potential functional genes of the bacteria in the Paocai brine.The alpha diversity of bacterium stored for 1 d,8 d,and 30 d differed,while their dominant microflora composition was similar.A total of 20 phylum,33 classes,79 orders,92 families,320 genus,and 388 species of bacterium were identified.At the phylum level,the proportions of Firmicutes and Proteobacteria for all three storage times were both relatively high at 52.52%and 52.96%,47.55%and 47.46%,and 45.68%and 52.17%,respectively.Eight dominant genus were identified(>1%):Enterobacter,Leuconostoc,Unspecified_Enterobacteriaceae,Lactococcus,Citrobacter,Unspecified_Lactobacillales,Unspecified_Lactobacillaceae,and Rahnella.More rare genera were observed(<0.01%),with a total of 99 genera,and the composition varied greatly among samples stored for different amounts of time.One phylum,38 families,89 genus,and 173 species were not identified.Six types with 364 species functional genus were annotated in the Paocai brine,mainly related to metabolism,genetic information,cell transformation,pathogenesis,and environmental information processing.
