中文摘要: 食源性致病菌引起的食品安全是影响公共卫生和人类健康的重要因素,因此如何高效、便捷地检测食品中的致病菌是食品行业关注的焦点。表面增强拉曼光谱(surface enhanced Raman spectroscopy,SERS)可直接或间接识别致病菌的“指纹”信息,在食源性致病菌检测中的应用前景广阔。该文总结SERS的发展、增强机制、基底类别及其在食源性致病菌检测中的应用,在提出其局限性的同时对未来发展趋势进行展望。
Abstract:Foodborne pathogens are major factors influencing food safety,thus posing a threat to both public health and human health.Therefore,it is an urgent task for the food industry to detect pathogens in food in an efficient and simple way.Surface enhanced Raman spectroscopy(SERS),which can directly or indirectly identify the'fingerprint'of pathogens,has a broad prospect in the detection of foodborne pathogens.This paper summarized the development,enhancement mechanism,and substrate types of SERS and its application in the detection of foodborne pathogens.While summing up the limitations of SESR,it predicted the future development trend.
