中文摘要: 为探究水产品体内微量元素锶的含量及分布,该试验采用电感耦合等离子体质谱法检测微量元素锶,对海州湾水产品花蛤、牡蛎、海螺、虾姑、梭子蟹、虾虎鱼中锶的分布和释放进行研究。其中虾虎鱼的锶含量最高,为3.33 mg/kg。锶在虾虎鱼体内分布不均匀,以骨骼中含锶元素最多,为80.45 mg/kg。酸性条件有利于鱼骨中锶的释放,在水杨酸和酒石酸溶液可以释放40%以上的锶。延长烹饪时间和添加食醋有利于锶的释放。
Abstract:The purpose of this study was to investigate the content and distribution of the trace element strontium in aquatic products.Strontium was determined by inductively coupled plasma mass spectrometry(ICP-MS).The distribution and release of strontium in Ruditapes philippinarum,Ostrea gigas,Busycon canaliculatu,Mantis shrimp,Portunus trituberculatus,and Synechogobius hasta(goby)of Haizhou Bay were studied.The content of strontium in goby was the highest,which was 3.33 mg/kg.The content of strontium distributed unevenly in the body of goby,and the bones had the most strontium (80.45 mg/kg).Acidic conditions were beneficial to the release of strontium in the goby bones.Salicylic acid and tartaric acid released more than 40% strontium.Prolonging the cooking time and adding vinegar facilitated the release of strontium.Since goby was rich in strontium,it had the prospect to develop the strontium-rich products.
