中文摘要: 褐藻胶寡糖(alginate oligosaccharides,AOS)是由褐藻胶降解所得到的寡糖,其分子量小,溶解性好,保湿性与吸湿性良好,同时还具有很多生物学活性,包括抗氧化性、抗炎性、抑菌性、降血压活性、调节免疫活性、调节肠道菌群结构等,在食品工业、药妆领域有很大的应用前景。该文结合现有的相关文献,概述AOS的物理性质及生物化学性质研究进展,以期能为其相关产品的开发提供理论依据和研究思路。
Abstract:Alginate oligosaccharides (AOS)are a class of oligosaccharide produced by enzymatic degradation of alginate,producing low molecular weight oligosaccharides with strong solubility and good hygroscopic and moisturizing performance.AOS also has a variety of biological activities,including antioxidant,antiinflammatory,antibacterial,antihypertensive,immune regulation,gut microbiota regulation,and other biological activities.Thus,AOS has great potential for application in the fields of food,cosmetics,and pharmaceuticals.This review focused on research progress into the functional properties of AOS,and provided a theoretical basis and research ideas for development of related products.
