中文摘要: 毛酸浆(Physalis pubescens L.)是一种历史悠久的特色资源植物,不仅口感酸甜,富含维生素C等营养成分,更兼具抗炎、杀菌、抗肿瘤等多种生理活性,极具市场开发潜力。该文综述了以资源植物毛酸浆为原材料的各种果醋、果酒等加工饮品和酵素、果酱、果脯等毛酸浆加工产品的现状,展望了毛酸浆资源的应用前景。以期为毛酸浆在果品、食品及药品等工业中的深度开发利用,促进毛酸浆特色产业可持续发展提供参考。
Abstract:Physalis pubescens L.is a unique resource plant with a long history as a medicinal resource and food.Physalis fruits are sour and sweet in taste,rich in nutrients including vitamin C,and have anti-inflammatory,antibacterial,anti-tumor activities.They have great market development potential.This paper reviews the byproducts of the processing of Physalis raw materials,such as fruit vinegar,wine and other processed enzyme,jam,dried fruit and others.The promising applications of Physalis resources were discussed.This paper should provide reference for further development and utilization of P.pubescens L.fruits as food and medicine,and for the sustainable development of the characteristic industries.
