中文摘要: 为研究运输过程中莲藕品质的变化,在3种不同严酷水平的振动环境下模拟钢簧减振卡车运输莲藕,4℃贮藏,测定贮藏期间莲藕的失重率、色泽、呼吸强度、硬度、丙二醛含量、细胞膜透性、多酚氧化酶活性及过氧化物酶活性等指标的变化情况。结果表明,在贮藏期间,与对照组相比,振动组莲藕的品质下降更快,硬度、白度、维生素C含量和过氧化物酶活性均低于对照组;而呼吸强度、失重率、细胞膜透性、丙二醛含量及多酚氧化物酶活性均高于对照组。因此,在运输过程中,运输振动加快了莲藕品质下降,且振动强度越大,生理活动加速,莲藕品质下降越快。
Abstract:To study the changes in quality of lotus roots while transportation,this study simulated transportation of lotus roots using a steel-spring vibration-damping truck.The lotus roots were transported under three different levels of severe vibration while being stored at 4 ℃.The changes of weight loss rate,color,respiratory intensity,hardness,malondialdehyde content,cell membrane permeability,polyphenol oxidase and peroxidase and others were measured.Results indicated that compared with the control group,the quality of lotus roots in the vibration group decreased faster.Additionally,hardness,whiteness,vitamin C content and peroxidase activity were lower than the control group.Furthermore,respiratory intensity,weight-loss rate,cell membrane permeability,malondialdehyde content and polyphenol oxidase activity in the vibration group were higher than those in the control group.Therefore,this study proved that the vibration during the transportation process accelerates the decline of lotus root quality.Moreover,greater the vibration intensity,faster the lotus root quality decline.
