中文摘要: 利用红外光谱、紫外光谱以及扫描电镜对氨基酸螯合钙进行结构鉴定,并分析其抗氧化性、抑菌性及消化特性。结果表明:通过紫外、红外光谱分析,与未螯合产物比较,螯合产物在化学结构上发生了变化;利用扫描电镜分析,可以清晰地看到较多“白色晶体”附着在螯合产物表面。以上确证了氨基酸螯合钙的形成;氨基酸螯合钙可有效地清除DPPH自由基、羟基自由基和超氧阴离子自由基,具有较好的还原能力和抗氧化性。该螯合物对金黄色葡萄球菌、大肠杆菌和沙门氏菌均有抑菌效果,且对金黄色葡萄球菌抑菌效果最明显;体外模拟胃肠道消化试验显示,氨基酸螯合钙在模拟胃环境中消化2 h后,钙溶解率达到90.38%。氨基酸螯合钙在模拟肠道消化后钙溶解率维持在42.50%,说明该螯合物的钙溶出率较高。
Abstract:The structure of amino acid chelated calcium was identified by infrared spectrum(IR),ultraviolet spectrum(UV),and scanning electron microscope(SEM),and the antioxidant,antibacterial,and digestive properties were analyzed.The UV and IR spectra showed that the chemical structure of the chelated products changed compared with that of non-chelated products.“White crystals”were clearly identified on the SEM images attached to the surface of the chelated products.These results confirmed the formation of amino acid chelated calcium.The chelated composite could effectively scavenge DPPH,hydroxyl,and superoxide anion radicals,and had good reduction ability and antioxidant activity.Further,the chelate had a significant antibacterial effect on Staphylococcus aureus,and to a lesser extent on Escherichia coli and Salmonella.An in vitro gastrointestinal digestion test showed that the calcium dissolution rate reached 90.38%after digestion for 2 hours.The calcium dissolution rate was maintained at 42.50%after the simulated intestinal digestion,indicating that the dissolution rate was high.
