中文摘要: 姜作为一种药食两用资源,在我国使用广泛。姜中含有多种活性成分,如多糖、多酚、萜类、姜辣素及其衍生物等。其中姜多糖因具有抗肿瘤、抗氧化、降血糖、止咳、抗疲劳等多种生物活性,成为近年来的研究热点。因此,该文对姜多糖的提取、结构表征和生物活性等方面的研究进行综述,为姜及其多糖的合理开发利用提供参考。

Abstract:Ginger (Zingiber officinale Rosc.),as a dual-purpose resource of medicine and food,is widely used in China.It contains a variety of bioactive components,such as polysaccharides,polyphenols,terpenoids,and gingerol and its derivatives.Among these,ginger polysaccharides have become a research hotspot in recent years owing to their various biological activities,such as antitumor,antioxidant,hypoglycemic,anti-cough,and antifatigue effects.In this study,research on the extraction,structural characterization,and biological activity of ginger polysaccharides was reviewed to provide a reference for the rational development and utilization of ginger and its polysaccharides.
