中文摘要: 针对云南省3种大宗特色单花种蜂蜜(苕子蜜、澳洲坚果蜜、橡胶蜜),采集样品共45份,对其常规理化指标进行检测,包括淀粉酶活性、羟甲基糠醛、水分、酸度、糖组分(果糖、葡萄糖和蔗糖)等。系统分析和评价3种蜂蜜的理化指标特性,并与现有标准或文献进行了比对,利用主成分分析法对蜂蜜理化指标与其植物来源的关系进行简单分析。结果表明,苕子蜜、澳洲坚果蜜和橡胶蜜的各项指标均符合我国国家和行业标准,且各蜜种蜂蜜又有各自独特特征,其中新兴的澳洲坚果蜜具备生产成熟蜜的特征。主成分分析共提取出4个主成分,其中系数绝对值最大的参数为水分、葡萄糖、酶值和麦芽糖。
Abstract:Forty-five samples of Vocia villosa Roth honey,Macadamia integrifolia honey and Hevea brasiliensis honey were collected from Yunnan Province.Routine physical and chemical indices tested included amylase activity,hydroxymethyl furfural(HMF),moisture,acidity and sugar components(fructose,glucose and sucrose).The physicochemical properties of the honey were systematically analyzed,evaluated and compa red with the existing standards or published data.The relationships between the physicochemical indices of honey and plant sources were analyzed by principal component analysis(PCA).The indices of the three honey types met the national and industrial standards of China.Each honey displayed unique characteristics.The newly developed Macadamia integrifolia honey produced a mature product.Four principal components were identified from the PCA.The parameters with the largest absolute coefficient were moisture,glucose,enzyme value and maltose.
