中文摘要: 硒是人体必需的一种微量矿质元素,具有防癌抗癌、延缓衰老等生理功能。乳酸菌(lactic acid bacteria,LAB)能调节肠道菌群,有抗肿瘤和抗氧化等作用。许多研究者利用乳酸菌将培养系统中的无机硒进行富集并转化成有机硒,对乳酸菌富硒能力的影响因素以及富硒后产物的生物活性进行较系统的研究。该文从乳酸菌的富硒能力、乳酸菌对硒的转化形态及富硒后产物的生物活性方面进行综述,并展望乳酸菌富硒培养的发展前景,进一步开展乳酸菌富硒代谢产物的生物活性评价以及结合分子生物学方法解析乳酸菌富硒机理是今后的研究方向。
Abstract:Selenium is a critical micronutrient for human health that plays a significant role in anticancer and delaying aging.Lactic acid bacteria(LAB)can regulate the intestinal flora,and play an anti-tumor and antioxidant activity.Lactic acid bacteria enrich and convert inorganic selenium into organic selenium in the culture system.Systematic studies by researchers were made on the effect factors of selenium enrichment of lactic acid bacteria and the biological activity of selenium-enriched products.The selenium-enriched ability,transformation of selenium fractions,biological activity of selenium-enriched products of LAB were summarized in this paper and developing prospect was also discussed briefly here.Further study on bioactivity evaluation of selenium-enriched products and the mechanism of selenium enrichment of LAB based on molecular biomethods were important aspect in future.
