中文摘要: 葛根是一种营养丰富的药食同源植物,富含异黄酮、葛根素、皂苷类、葛根多糖、生物碱等活性组分,具有缓解人体氧化、抗炎、抗肿瘤、预防“三高”、降“三高”、解酒护肝、保护神经、雌激素样活性等功效。该文综述近年来国内外关于葛根功能性成分及其生物功效的研究进展,总结葛根在食品方面的应用现状,以期为葛根资源的综合利用和相关食品开发提供一定的指导。
Abstract:Puerariae lobatae, a nutrient-rich medicinal and edible plant, is rich in isoflavones, puerarin,saponins,pueraria polysaccharide, alkaloids, and other active components.It thus has extremely high nutritional and pharmacological value.Modern pharmacological studies have shown that,Puerariae lobatae delivers potent bioactivities, including anti-oxidative, anti-inflammatory, anti-tumor, blood sugar stabilizing, blood lipid and blood pressure regulating,alcoholic liver damage preventing,nerve protecting,and estrogen-like activities.This paper reviewed recent research into the functional components and biological efficacy of Puerariae lobatae, summarized its applications in the food industry, and tried to provide helpful guidance for the comprehensive utilization of Puerariae lobatae resources,including for food development.
