中文摘要: 对发芽糙米不同极性溶剂提取物的抗氧化活性及其成分进行分析,将发芽糙米分别用蒸馏水、甲醇、无水乙醇、丙酮、石油醚进行提取,采用DPPH自由基清除率、羟基自由基清除率、超氧阴离子自由基清除率和铁离子还原能力为指标进行抗氧化活性评价,同时探究不同极性溶剂提取物中总酚、总黄酮、γ-氨基丁酸、糖蛋白和多糖的含量及其对抗氧化活性的影响。结果表明:发芽糙米不同极性溶剂提取物均具有抗氧化活性,并呈现一定的量效关系。发芽糙米的蒸馏水提取物的DPPH自由基清除率、羟基自由基清除率和铁离子还原能力较高,而无水乙醇提取物的超氧阴离子自由基清除率较高。发芽糙米的甲醇、丙酮提取物中多糖含量最高,蒸馏水、无水乙醇、石油醚提取物中糖蛋白含量最高。表明不同溶剂提取物中多糖和糖蛋白含量对自由基清除活性和铁离子还原能力均具有较大的影响。
Abstract:The antioxidant activity and components of different polar solvent extracts of germinated brown rice were analyzed.Germinated brown rice were extracted with distilled water,methanol,anhydrous ethanol,acetone and petroleum ether.The antioxidant activity was evaluated by DPPH radical scavenging rate,hydroxyl radical scavenging rate,superoxide anion radical scavenging rate and iron ion reduction ability.At the same time,the contents of total phenols,total flavonoids,γ-aminobutyric acid,glycoprotein and polysaccharide in different polar solvent extracts and their effects on antioxidant activity were explored.The results showed that different polar solvent extracts of germinated brown rice had antioxidant activity and showed a dose-effect relationship.The distilled water extract of germinated brown rice had higher DPPH radical scavenging rate,hydroxyl radical scavenging rate and iron ion reduction ability,while the ethanol extract had higher superoxide anion radical scavenging rate.The content of polysaccharide in methanol and acetone extracts of germinated brown rice was the highest,and the content of glycoprotein in distilled water,ethanol and petroleum ether extracts was the highest.The results showed that the contents of polysaccharide and glycoprotein in different solvent extracts had great influence on free radical scavenging activity and iron ion reduction ability.
